Every so often, I have a super adult-ish kind of day. You know the ones: making dentist appointments, signing school permission slips, running errands, etc. Thrilling, it isn’t. But necessary.
My way of keeping myself young at heart? I occasionally make cookies for breakfast. And not just any cookies. Without fail, my go-to for a quick and easy cookie fix is Cake Mix Cookies!
This time, it’s these indulgently sweet and colorful strawberry cake mix cookies. Delicious, easy, perfectly soft and chewy. They have just enough bright pink coloring and sugary flavor to reboot my inner child, while bringing all kinds of joy to my actual children. Of course, making them for breakfast is optional!
Cake mix cookies are not only quick and easy, they’re also crazy versatile! I love these cookies because I can use just about any cake mix variety and add-ins my heart desires. Talk about endless flavor combos! Cake mix cookies also happen to be great to make with kids, since they’re super simple.
What You’ll Need
- Cream Cheese: Take the cream cheese out of the fridge about a half hour before you start, to let it come to room temperature. This makes it easier to combine with the other ingredients.
- Butter: Also brought to room temperature.
- Strawberry Cake Mix: Your favorite brand of boxed cake mix. You need the dry cake mix only, and not all the extra ingredients on the box.
- Powdered Sugar: For coating the cookie dough before baking.
- Egg
Make the Dough: Cream together the cream cheese and butter, then beat in the egg. Slowly add in the dry cake mix until a thick dough forms.
Chill: Pop the dough into the fridge to chill for about an hour, just enough to make it less sticky to handle.
Roll the Dough: While the oven preheats, roll the cookie dough into 1-inch balls. Roll the balls in powdered sugar and then place them onto a parchment-lined baking sheet, leaving some space to account for spreading.
Bake: Bake the cookies until the centers are just set. Leave the cookies to cool on a wire rack.
Tips for Success
- Results May Vary: Depending on the box cake mix you use, your cookies may bake up differently! Some may spread more while others turn out thicker. Not in a bad way, but it’s just something to keep in mind.
- What If I Don’t Have a Mixer?: These cookies are so easy to make, with or without a mixer. The key is to soften ingredients like cream cheese and butter beforehand, and you shouldn’t have any problems mixing these up with a spoon or spatula.
- Can I Use Another Kind of Cake Mix?: Absolutely! If strawberry isn’t your thing, you can certainly try out this recipe with any cake mix varieties of your choosing! How to Store
Your strawberry cake mix cookies will stay soft for up to 4-5 days when stored airtight at room temperature.
Can I Freeze These?
Yes! Store the cookies in an airtight, freezer-safe container or bag and keep them frozen for up to 3 months. Thaw the cookies on the counter at room temperature.

Description
Irresistible Strawberry Cake Mix Cookies are an easy dessert made from a box of cake mix and common pantry ingredients! These rosy strawberry cookies are soft, fluffy, and full of sweet berry flavor.
Ingredients
- 1 (8 oz) block cream cheese, room temperature
- 1/2 cup butter, room temperature
- 1 egg
- 1 box (18.25 oz) Strawberry Cake Mix
- 1/4 cup powdered sugar
Instructions
- In your mixer cream together the cream cheese and butter until smooth. Add egg and beat until combined.
- Turn mixer to low and slowly add in your cake mix. The dough will be thick.
- Refrigerate dough for about a hour or so, just enough so it’s not quite as sticky. Also, the colder the dough is the puffier your cookies will be.
- When dough is chilled preheat oven to 350°.
- Line your baking sheet with parchment paper.
- Place. powdered sugar in a small bowl
- Roll dough into balls about 1 inch in diameter, then roll in powdered sugar.
- Place about 2 inches apart on prepared baking sheet and bake for approx 10 minutes until centers are just set.
- Cool on wire rack
